The Hermanos Pacheco started with a small fishmonger's stall in Barbate, hand-curing mojama from the almadraba bluefin tuna caught off the Cádiz coast. They formalized the business in 1986 and now operate from an 8,500-square-metre facility in Barbate, producing over 500 tonnes of almadraba tuna products annually. The factory tour, with a full ronqueo demonstration, has become a visitor attraction in its own right.
