Started from three market stalls in Barcelona's La Boquería, specializing in a Mediterranean approach to smoked salmon, less smoke and a touch of sugar, distinct from the Nordic style that dominated the European market at the time. The factory is now in San Feliu de Llobregat, outside Barcelona, and the range extends to smoked tuna, trout, and other species.
