A small producer in the Azores that smokes its fish over endemic Firetree wood, a species removed from the islands as part of ongoing forest management. The wood is sourced from cleaning operations rather than harvested for the purpose, giving the smoke a particular character tied to the archipelago itself. One of the most distinctive smoking operations in Portuguese conservas.
