Baby eels, known as angulas in Spanish, are the juvenile stage of the European eel (Anguilla anguilla), harvested as they migrate from the Sargasso Sea back to European rivers. A prized Basque Country delicacy historically served in olive oil with garlic and chilli, angulas command some of the highest prices of any seafood in the world. Commercial pressure and eel population decline have made them increasingly rare and regulated. In tinned form, they appear as a premium conservas product distinct from adult eel.
