Arctic char (Salvelinus alpinus) is a cold-water salmonid native to Arctic and subarctic freshwater and marine environments, closely related to both trout and salmon. It is the northernmost freshwater fish in the world, found in the lakes and rivers of Iceland, Scandinavia, northern Canada, Alaska, and alpine regions of Europe. The flesh ranges from pale pink to deep red depending on diet, with a delicate flavour milder than salmon and richer than trout. Iceland is the primary source of commercially available arctic char, farmed in geothermal water systems. Reykjavik Foods produces premium tinned Icelandic arctic char as part of the new wave of Icelandic artisan seafood. The species has strong potential in the premium tinned fish category but remains uncommon.
