The flesh was very firm, and flaked well. I tried this some Espinaler sauce, and also yellow mustard. Sometimes a sardine is just fine on a saltine. This is one of those Sardines. An excellent, savory, nearly buttery collection of large size sardines. Excellent on some toast with a little smear of aji amarillo paste. Classic lunch. There was barely any oil to pour off; the fish seemed to have absorbed just the right amount to keep them meaty. These seem perfect for an omelet or scramble or on a winter salad of bitter greens.
