Asturias

Coastal region of northern Spain on the Cantabrian Sea, wedged between the Basque Country and Galicia. Home to Gijón-based Agromar, founded in 1948, which pioneered the canning of sea urchin roe from Cantabrian rocks and beaches and remains one of the few producers in the world to tin percebes and sea urchin successfully. Asturias is known for bonito del norte, anchovies cured in salt barrels, and oricio, all caught from small boats and processed by hand in family canneries within sight of the fish markets. The Asturian conservas tradition is quieter than Cantabria's or Galicia's but no less serious: producers like La Mar de Tazones and Agromar represent a craft approach deeply connected to the local fishing community.
